One day, I was walking around the Wynwood Second Saturday Art Walk in Miami when I came across Michael Kritikos and his The Original Greek food truck. His gyros were yummy and his smile was big, so I decided to find out a little more about the highs and lows of operating a food truck in South Florida. Because the day was brutally hot, I asked Michael how he survives the summer months and whether he feels like he needs to work ALL the time.
I really wanted to know: How does a food truck owner strike a work life balance when every minute he is cooking and serving is money in his pocket and every day he takes off is lost income?
Michael had just returned from his first vacation in many years and had a lot to say about the challenges of running a mobile business and striving for work life balance.
